3 cups all-purpose flour
1½ tsp baking powder
¾ tsp baking powder
¼ salt
1 tbsp ground ginger
1¾ tsp ground cinnamon
¼ tsp ground cloves
1 large egg
½ cup molasses
2 tsp vanilla
1 tsp finely ground lemon zest (optional) I have never used!

Preheat oven to 375º. Prepare baking sheets by lining them with parchment paper.

In a small mixing bowl, whisk together flour, baking powder, baking soda, ginger, cinnamon, and cloves until blended.

In a large bowl, beat butter, brown sugar and egg on medium speed until well blended.

Add molasses and vanilla and continue to mix until well blended.

Gradually stir in dry ingredients until well blended and smooth.

Divide dough in half and wrap each half in plastic and let stand at room temperature for 2-8 hours. Dough can be stored for up to 4 days but in this case in should be refrigerated. Return to room temp before rolling out.

Place 1 portion of the dough on a lightly floured surface.Sprinkle flour over surface and rolling pin. Roll dough to a scant ¼ inch thick. Cut out cookies with the desired cookie cutter-gingerbread men being the desired one of course. Space cookies 1½ " apart.

Bake 1 sheet at a time for 7-10 minutes depending on if you want soft cookies or cookies that are more crisp.

Remove cookie sheet from oven and allow cookies to stand until the cookies are firm enough to move to rack.

Have fun decorating! I love just brushing them with a powdered sugar glaze-water or milk and powdered sugar . This is faster and so delicious!

I have made gingerbread "families"- 2 larger cookies and several small ones-and put them in cello bags and given them as gifts!
