Dutch Oven Brisket Recipe

2-3 Pound Brisket or Chuck Roast

Smoky Sauce - Dry ingredients:

Chili Powder
Elote Seasoning (or plain cumin is fine)
Minced Onion Flakes
Cilantro
Crushed Red Pepper Flakes
Dash of salt
Pepper

Smoky Sauce - Wet Ingredients. Splash of each until mixture is wet enough to mix it all up.

Grapeseed Oil (or any neutral oil)
Maple Syrup
Worcestershire Sauce
BBQ Sauce
Lime Juice
Liquid Smoke - go easy on this as it is a strong, concentrated flavor.

Combine all ingredients and in a small bowl, until well incorporated. For the 2 pound brisket I made, I yielded roughly 1 cup of the sauce. It had the consistency of chocolate syrup.

Meat Prep:

I added enough grapeseed oil to lightly coat the bottom of the Dutch Oven. Quickly seared the meat on both sides, less than 2 minutes per side. Turned off searing.

For the meat side up only, I spooned roughly half of the sauce mixture and spread evenly all over the top. I reserved the rest for the other side to add later.

Set to braising for one hour with lid on.

After one hour, I checked the internal temp and it was already around the 160 degree mark. Flipped it over and spooned the rest of the sauce on that side of the meat. Decided to switch it to slow cooking, checked it again in another hour and it was falling apart in places and over 190 degrees.

I set the meat on a plate to rest for a few minutes. In the meantime, I ladled the sauce through a strainer and discarded the oily remnants. I added the concentrated sauce from the strainer back to the pot. Then, diced up the meat, threw it back into the pot and stirred it up into the sauce for a few minutes over the Keep Warm setting. Served immediately over cilantro-lime (packaged) rice and with all the burrito bowl fixings!
