1 cup raisins
3/4 cup water
2 cups firmly packed brown sugar
1/2 cup shortening
1/2 cup butter, softened
2 eggs
1 egg yolk
2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/8 tsp. cloves
2 cups quick-cooking rolled oats

Filling:
2 cups powdered sugar
Dash of salt
2 TBSP milk
1 tsp vanilla
1 egg white
3/4 cup shortening

Heat oven to 350º
Line cookie sheets with parchment paper

In small saucepan, combine raisins and water and bring to a boil. Turn off heat. Drain, reserving 1/4 cup of liquid.

In a large bowl beat brown sugar, shortening and butter until light and fluffy. Add eggs and egg yolk and beat well. Lightly spoon flour into measuring cup and level off.

In medium bowl, combine flour, baking soda salt, cinnamon and cloves and blend well. Add the 1/4 cup reserved liquid and flour mixture to sugar mixture and mix well. Stir in the oats and raisins. Drop by heaping tablespoonfuls about 3 inches apart on the cookie sheets. Bake at 350 for 13 to 18 minutes or until golden brown.
I rotate the cookie sheet about halfway through cooking.
Cool completely.

Filling:
Mix shortening and 1 cup of powdered sugar.
Add egg white, milk, vanilla, salt and other cup of powdered sugar.
Beat well, until smooth.
Put about a TBSP or so of filling between 2 cookies.

This recipe is a favorite of anyone who has tasted it since I have been making them. I started making these cookies in 1985 or 1986. The recipe is worn and torn because it is such a favorite. I have probably made this recipe 100 times.
