Ingredients: Bone-in, Skin-on chicken breasts Water Poultry Seasoning Onion Salt Pepper Mayonnaise Celery

Directions:1. Place bone-in, skin-on chicken breasts into a pot with a large onion and "a bunch of" celery (with celery leaves), cover with cold water and season with salt, pepper, and poultry seasoning. 2. Bring to a boil and cook for about an hour, until done. 3. Remove skin and bones. 4. Place meat in food processor and pulse a few times until finely chopped. *You can also finely dice by hand if you don't have a food processor. 5. Add finely diced celery (Granny likes the lighter color, tender celery hearts). *Tip: store the cleaned celery, cut into sticks, in the fridge submerged in water before you begin the process to ensure the celery is crisp before you dice it to add. 6. Add mayo (Granny uses Hellmann's), salt, and pepper to taste. 7. Store in fridge. 8. Stir before serving and add more mayo, salt, and pepper, if needed, after it has set up in the fridge. |

Notes: Serve with crackers, celery sticks, on a sandwich, or, Granny's favorite--on mini croissants.
Granny used a knife and fork for years to finely dice her chicken however, at about age 85, at her daughter-in-law's urging, she tried the food processor to dice the chicken and hasn't looked back since!
This chicken salad has been enjoyed by generations--and most recently, over the years by all of Liz's friends at Cottage Fest!
