3 cups granulated sugar
1 can (12 fluid ounces) Evaporated Milk
¼ cup (1/2 stick) butter or margarine
½ teaspoon salt
4 cups miniature marshmallows
4 cups (24 ounces) or two 12-ounce packages of chocolate chips. (Semi sweet is preferred)
1 cup chopped pecans or walnuts (optional)
2 teaspoons vanilla extract

Directions:

Line an 8-inch-square baking pan with foil or parchment paper. Lightly coat with non-stick cooking spray.
Mix, Sugar, Evaporated Milk and butter in a medium, heavy-duty saucepan. Bring to a boil over medium heat, stirring occasionally. Once boiling, stir constantly for 4 minutes. Remove from heat. Add chocolate chips and Marshmallows all at once. Stir vigorously until morsels and marshmallows are melted.
Immediately pour the mix into the pan and smooth out the top. Place in the fridge for two hours or until firm. Lift out of the pan and remove the foil/paper. Cut into 24 pieces. Tip: Before cutting, remove from the refrigerator and let stand at room temperature for 30 minutes. Dip a sharp knife into hot water and wipe dry. Cut fudge, and wipe clean after each cut.

I honestly think that you can make fudge with any type of chocolate chip. I have been thinking about experimenting with the white chocolate mint chips. You can also add peanut butter, Carmel…. Literally anything you'd like.
