Ingredients: 4 c flour ¼ c lard or shortening 2 tbsp salt 2 tsp baking powder Hot water Oil

Directions:Mix dry ingredients. Add fat and mix with your hands until it is combined. Slowly add your hot water until the flour is absorbed and there are no dry areas. The dough should be a bit sticky but not too much. If it is too sticky to work with. Simply add more flour a little at a time. Form dough into a ball, cover for about 10 minutes. (*)While waiting, heat your oil in a deep pan on medium high heat. Around 375°. Divide the large dough ball into 12 smaller balls. Roll into long ovals. Cut in half short ways and add to the oil. Cook for 2-3 minutes on each side. Remove and let drain on a rack, colander or paper towels. Serve immediately with confectioner's sugar, honey or both.
*You use this very same recipe to make homemade flour tortillas. The only difference is that you heat your comal on your stove while you are letting your tortilla dough sit. Then you roll your tortillas out round (do not cut of course) and then just cook them on your comal. |

Notes: Note: The more you make these items, the better you will get. It took me years to make the tortillas right. It seems simple but you have to get a good feel for the dough consistency and the heat you need to make them just right. When you get bubbles in your flour tortillas, it means the mixture was perfect.
