Roasted chili (peeled)
¼ cup Oil
¼ cup Flour
1 oz Garlic
1 oz Onion
TT Cilantro
TT Cumin
2 tbsp Salt

Water or broth

Shredded meat of your choice

Directions:
The first thing you should do is make sure all of your Chili's are peeled and cut to your desired size. You can also blend your chili with a little bit of liquid and use that instead. Heat your oil in a dutch oven saucepan on medium heat. Add your flour and proceed to make a roux. Once your flour has browned to a light golden color. You can add your liquid. ( I prefer to boil my meat if I am making green chili with chicken for green chicken enchiladas). (*) Add your garlic onion cilantro cumin salt. Add meat and bring to a boil. (**) Then turn the heat down to a simmer and simmer for 30 minutes.

*Or you can fry your meat in the oil and flour and add your liquid that way, if you prefer to fry your meat instead of boiling it.

**Since your meat would already be cooked, you don't have to add it until towards the end of simmering your sauce.
