1 (8 oz) pkg cream cheese at room temperature
1 stick unsalted batter at room temperature
1 egg
1 teaspoon vanilla extract
1 box spice cake mix
˝ cup pumpkin
1/8 teaspoon pumpkin spice (Optional)
1 cup raisins
1 cup chopped walnuts

Directions:

Perheat oven 350 degrees
In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in the egg, pumpkin, pumpkin spice, raisins, chopped walnuts, and vanilla extract. Add the cake mix and mix until combined.
Cover and refrigerate for ˝ hour to firm up so that you call roll the batter onto balls. Roll the chilled batter into batter into tablespoons sized balls.
Place on an ungreased cookie sheet, 2 inches apart.
Bake 8 minutes and turn sheet(s) 5 minutes. Total 13 minutes. The cookies will remain soft and “gooey”. Cool completely.
