All Purpose Flour 1 1/4 Cups

Whole Wheat Pastry Flour 1/2 Cup

Baking Powder 1 1/2 TSP

Baking Soda 1/2 TSP

Ground Nutmeg 1/4 TSP

Ground Allspice 1/4 TSP

Salt 1/2 TSP

Canola Oil 1/3 Cup

Sugar 2/3 Cup

Water 1/4 Cup

Lemon Juice, Fresh Squeezed 1 TSP

Bananas Mashed 1 Cup (2-3)

Chopped Pecans (Optional) 1/4 Cup

Peal and Mash Bananas in a small bowl

Measure dry ingredients into a large bowl

In a medium bowl, add canola oil, water, sugar, and lemon juice. Stir until blended.

Add Liquid ingredients to dry ingredients. Add bananas and pecans. Stir until all ingredients are mixed. DO NOT OVER STIR

Pour into a greased loaf pan. Bake at 350º for 40-45 minutes. Check center for doneness. Should be barley dry.

Let cool in pan for 15 minutes. Remove and cool to room temperature. Wrap and store in refrigerator, can also be frozen.
