4 Bell peppers (can use 6 Bell peppers)
1 Small onion, finely chopped
1lb Ground chuck
½ C Rice, cooked
1 large egg, beaten
¼ to ½ C Parmesan cheese
1 tsp Salt
½ tsp Black pepper
1 Garlic clove, finely chopped
1 8oz Container, Sour cream
4-6 Cans Tomato soup, undiluted

Pre-heat oven to 350ºF

Wash peppers, cut off tops (save tops) and remove seeds. Set aside. In a bowl add onion, ground chuck, cooked rice, egg, parmesan cheese, salt, pepper, sour cream and garlic. Mix well.
Stuff peppers with meat mixture and put pepper tops back on peppers. If you have any leftover meat filling, form it into meatballs. Place stuffed peppers and any meatballs in a large pot. Pour undiluted tomato soup over peppers, cover with pot lid.
Put pot in oven and cook for 45 to 60 minutes. After 45 minutes, check peppers with a fork to see if they are soft.

Peppers can also be cooked on the stove top for 1 hour at medium heat or in a slow cooker on low for 8-10 hours.
