Olive oil, for coating
12-18 lean and cleaned lamb chops
1 onion, sliced
6 potatoes, peeled and cut into french fry shapes
½ teaspoon dried oregano
Salt, to taste
Black pepper, to taste

Directions:
Directions:
1) Preheat oven to 400º.
2) Coat the bottom of a large pan with a little olive oil to prevent sticking.
3) Place your lamb chops evenly on the pan and cover with the onion and potatoes.
4) Sprinkle salt, pepper, and oregano on top and drizzle with a little olive oil.
5) Bake in the oven for an hour then take the pan out and turn the chops/potatoes.
6) Place back in the oven and cook until the potatoes are tender.
