1 pound red lentils
1 small onion diced
1 1/2 cups chopped leaks
2 cups chopped carrots
8 cups water (approximate)
6 bouillon cubes (more or less to taste)
pepper

(optional 1 or 2 diced potatoes)

Directions:
Directions:
Mix all ingredients together and let mixture come to a boil, turn to low heat and let cook for about an hour. Stirring occasionally.

When Granny makes this, she lets it cook on low all day, but it is ready after an hour. It tastes better the next day.

Dave's family is from Denny, Scotland. They eat a lot of soup! Every time Granny (Jill) and Grandpa (Willie) visit the US, Granny makes this soup. It's a big hit with the whole family.
