1 1/2 c butter (softened)
1 1/2 c brown sugar
1/2 c sugar
3 eggs
2 T corn syrup
1 T vanilla extract
3 3/4 c flour
1 c milk chocolate cocoa powder (I use Hershey)
1 T cornstarch
2 t baking soda
1 t salt

Ganache Icing:
2/3 c heavy cream
2 c milk chocolate chips

Directions:
Directions:
Preheat the oven to 350°.
Cream butter and sugars. Add in the eggs, corn syrup and vanilla. Mix until thoroughly combined.
Add flour, cocoa, cornstarch baking soda and salt. Mix until your cookie dough forms. The dough will be soft.
Use big cookie scoop, or 1/3c measuring cup to scoop cookies. Roll each portion onto a ball then flatten slightly so it looks like a hockey puck. Arrange cookies on cooking sheet with enough space in between.
Bake for 12-15 minutes.

Make the Ganache while cookies are baking. Heat heavy cream in microwave safe bowl for 1 1/2 minutes or until boiling.
Put in chocolate chips so they are all covered by cream. Let sit 3 minutes.
Stir until smooth. Don’t beat, otherwise there will be air bubbles that will make it not be smooth/pretty.
Let sit on counter to cool.

Let cookies cool for 10-15 minutes before spreading ganache with a spoon. (Wait long enough so the ganache doesn’t drip off the cookie.)
