14 oz can pumpkin
2 cups plain greek yogurt
14 oz can Lite Peaches (low sugar) undrained
1/4 tsp grated nutmeg
1/2 tsp cinnamon
5 Medjool dates
3 scoops dietary fiber (such as psyllium)
maple syrup (or honey) to taste
1 can evaporated milk (I used about half, as needed to get correct thickness)

Directions:

Mix all ingredients except milk in high powered blender (such as Ninja) or food processor. Add milk as needed to make pudding consistency. (If desired, add additional milk to make a pumpkin shake). Add maple syrup to taste.

The result of adlibbing after substituting ingredients for a different recipe. This is a luscious creamy pumpkin pudding with 'no guilt'. High protein, lots of fiber and veggies. Can be served as a breakfast yogurt, or by adding more maple syrup a healthy-ish dessert.
