340g self raising flour
140g margarine softened (use butter if no margarine)
Pinch of salt

140g sugar
2 tsp heaped of ground ginger
1.5 tsp bicarbonate of soda

230g golden syrup

Oven 160C fan, 180C

Rub together the flour, margarine and salt in a large bowl until like fine breadcrumbs.

Add the sugar, ginger and bicarb.

Warm the golden syrup and then add to the rest of the ingredients. It should be a gentle caramel colour and holding itself together quite well.

Grease a baking sheet or use teflon sheets. Make small balls about 2/3rds of a golf ball. Lay on the tray spaced out as they spread. I then squidge them down a bit with a fork to about half height but the original recipe didn't say you had to do that.

Bake in the oven for about 10-12 minutes until golden brown. They may need a bit longer. Cool for 10 min on the baking tray until they are stiff and then put on a cooling rack.
