4 egg whites
½ tsp cream of tartar
½ tsp vanilla
1 C sugar
8 oz lemon curd

Directions:
Directions:
Preheat to 200º
Line 2 baking sheets w/ parchment paper.
Combine egg whites, tartar and vanilla w/ electric mixer until whites are foamy.
Very slowly, while continuing to beat, add sugar. Beat until mixture is thick, glossy. Use spoon to dollop mixture on to baking sheets, press indent into center of each with damp finger.
Bake for 1½ hrs or until the meringues are dried and crisp. Once cool, store in airtight container, room temp, btwn sheets of waxed paper.
Just before serving, add tsp of lemon curd to each indent.
