Ingredients: 5 cups dry macaroni 1/2 cup butter 1/2 cup flour 1 quart milk 2 lbs. Velveeta cheese, cubed 3 tablespoons onion, finely chopped Salt to taste 1/2 cup butter 1 1/2 cups bread crumbs, finely ground

Directions:Cook macaroni according to package directions. Drain. Wash twice in cold water and leave in water until ready to use, then drain thoroughly. Make a sauce by melting 1/2 Cup butter and stirring in flour. Gradually add milk, stirring constantly. Bring to a slow boil. Turn heat to low; add cheese, onion, and salt, stirring occasionally until cheese melts. Combine sauce and macaroni thoroughly. Put in 2 large greased casseroles.
Melt 1/2 cup butter and add bread crumbs. Sprinkle over tops of casseroles. Bake at 350 degrees for 3/4 to 1 hour. Can be made day ahead and refrigerated, also freezes well. |

Notes: This is a huge recipe, so you might want to make 1/2 of recipe. Since it makes two big casseroles, it is nice to put one dish in the freezer for later.
