Ingredients:  
3 to 4 strips bacon, cooked until crisp
2 pork chops, cut into bite size pieces
(or you can use chicken)
1 medium onion, chopped
1 carrot, grate or chop into small pieces
1 cup frozen peas
3 to 4 cups cooked rice
2 eggs, scrambled (season to taste)
1 pkg Fried Rice Seasoning, optional
(or chicken brouth, about 1 cup)
Soy sauce, if desired

Directions:
Directions:
Fry bacon strips and remove from skillet. Reserve 2 tablespoons of fat and fry pork chop pieces until done. Saute onions for several minutes and add carrots, peas, cooked rice, and scrambled eggs. Cook to warm ingredients. Add fried rice seasoning per directions on the packet or chicken broth. Stir and fry about 5 to 10 minutes until hot. Crumble bacon, sprinkle on top of rice and serve.

You can serve this as is, right out of the pan or with some soy sauce to the individual taste. I especially like it with stir-fry vegetables. Some like it with brown gravy.
