1 cup unsalted butter, softened to room temp
2 cups sugar
2 eggs
15zo full fat ricotta cheese
1 tsp vanilla
2 Tbs Orange zest
4½ cups flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt

Glaze
¼ cup butter, melted
2 cu[s powder sugar
3 Tbs heavy cream
1 tsp vanilla

Cookie:
Preheat oven to 350º. In bowl cream together butter and sugar, then add eggs. Add ricotta cheese and mix until smooth and fully incorporated. Add vanilla and orange zest and blend. In a separate medium bowl, whisk together flour with baking soda, baking powder and salt. Gradually add the powder ingredients to the wet mixture one cup at a time until dough is formed. Drop dough by heaping tablespoons onto ungreased cookie sheet (they will puff up while baking). Bake for 10-12 minutes or until lightly golden around bottom edges. You want them to remain soft and not over baked. Remove from baking sheet and cool completely before putting glaze on your cookies.

Glaze:
Mix together melted butter, powder sugar, heavy cream and vanilla in a bowl until smooth and no lumps remain. Add additional milk or cream to get the desired consistency,
