3 egg yolks, beaten
3/4 cup sugar
1/4 cup corn starch
2 tsp vanilla
2 cups milk
2 tbsp. butter

Directions:
Directions:
Combine all ingredients except butter and mix well. Add butter. Cook in double boiler until mixture is thick and bubbling. Pour into baked pie shell. To stop "skin" from forming cover with plastic wrap until cool. Peel off plastic wrap and top with meringue or whipped topping.

To make:

Chocolate Cream - add 1/2 cup chocolate chips or milk chocolate chips.
Coconut Cream - add 1/2 cup shredded coconut
Banana Cream - add 2 sliced bananas tossed in lemon juice.

This was one of the very first things that Judy taught me how to make after the pie crust. She always stressed to make sure everything was incorporated together and then put the butter in as it cooked to bind everything together. The basic cream can be used as a base for any type pie. Use Hersey Bars to make it a Hersey Bar Pie; Heath Bars for a Heath Toffee Pie. Use Brown sugar instead of white for a Butterscotch pie; add Peanut Butter for a Peanut Butter Pie, etc. This can also be used as the base for Cream Puff filling.
