1 c. sugar (Splenda is best)
1 c. shortening
1 egg
1/8 tsp. salt
3 1/2 c. flour
1/2 c. 2% milk
1 tsp. vanilla
2 tsp. cream of tartar
1 1/2 tsp. baking soda

1 c. dates, cut up
1 T. flour
1/2 c. sugar (Splenda is best)
1/2 c. water
1/2 c. nuts

Directions:
Directions:
Preheat oven to 375°. Cream shortening and sugar. Add slightly-beaten egg and vanilla; mix well. Add milk. Sift dry ingredients together; add to mixture. Roll out thin and cut in rounds.
Filling: Mix flour and sugar together. Add dates and water and boil together. Add nuts, if desired. Cool mixture before filling cookies. Place filling between 2 rounds and seal cookies together with a fork.
Bake at 375° for 14 minutes, until light brown.
