2 boxes dates, pitted & cut up
1 c. sugar
2 c. sugar
1 c. margarine
3 eggs
1 c. sour cream
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla extract
4 c. flour

Directions:
Directions:
Cook dates and 1 c. sugar in a pan with enough water to just cover.
Mix cookie ingredients until well blended. Cool in refrigerator. Take out part of dough and rollout, mixing with flour as you roll. Cut with a cookie cutter. Place a small amount of filling between 2 cookies and seal edges. Bake at 350° for about 12 minutes.
Note: These freeze well.
