Cherry Chocolate Cake or Bars Recipe

Ingredients: 1 pkg. chocolate fudge cake mix 1 can cherry pie filling (21 oz.) 2 eggs, beaten 1 tsp. almond extract or vanilla Hint: I add 1½ tsp. baking powder at the lower elevation as it helps them to raise more.
Frosting:
1 cup sugar ⅓ cup milk 5 tbsp. butter 1 cup chocolate chips (mini chips work better)

Directions:In mixing bowl, beat eggs. Stir in dry cake mix (can use mixer). Will be very thick. Hand stir in cherry pie filling and vanilla. Add baking powder. Stir.
For Bars: Bake at 350º in greased jelly roll pan about 20-25 minutes until toothpick comes out clean.
For Cake: Bake at 350º in greased 9x13 cake pan 30 minutes or until a toothpick comes out clean.
Frosting:
Bring sugar, milk, and butter to a boil and boil for 1½ minutes. Remove from heat and stir in chocolate chips. Stir until chips are melted and pour over hot cake or bars and spread. Frosting will harden as it cools.
Hint: I put the pan (bars only) on some aluminum foil after baking (folded up around the sides) as many times the frosting will run over the sides. |
