Standing Rib Roast Recipe

4-5 lb standing rib roast
4 carrots
2 Tblsp olive oil
2 onions
1 tsp kosher salt
3 sprigs Rosemary
1 bag baby potatoes
3/4 c horseradish sauce
1/4 tsp pepper
1 1/2 tsp Worcestershire sauce

Directions:
Directions:
Preheat oven to 475*
Cut veggies into 1” pieces
Combine all veggies and olive oil in a bowl. Transfer to a roasting pan.
Season all sides of roast w/salt.
Place roast on rack over veggies.
Place roast in oven and reduce heat to 325*
Bake 1 hour
Meanwhile remove rosemary leaves from stem, chop leaves finely. Combine w/ horseradish sauce, Worcestershire sauce and pepper— set aside.
Remove roast from oven. Coat with horseradish sauce mixture.
Bake 1 1/2 - 2 hours until internal temp reaches 145*
Let roast stand 10-15 minutes before slicing.
