1 cup Cake Flour
7/8 cup (3/4 cup + 2 tbsp) Sugar
12 (1 1/2 cups) Egg Whites (Room Temperature)
1 1/2 tsp Cream of Tartar
1/4 tsp Salt
1 1/2 tsp Vanilla Extract
1/2 Almond Extract
3/4 cup Sugar

Directions:
Directions:
Preheat oven to 375º
Step 1:
Measure and sift together the cake flour and sugar (3 times)
Step 2:
Measure into a large mixing bowl egg whites, cream of tartar, salt, vanilla and almond
Step 3:
Beat mixture in mixing bowl at medium speed, adding 2 tbsp at a time 3/4 sugar. After last addition of sugar turn to highest speed and continue beating, scraping sides of bowl constantly with rubber spatula until meringue is firm and holds stiff straight peaks.
Step 4:
Place flour and sugar into sifter and sift about 3 tbsp over entire surface of meringue. Fold gently with wire whisk or spatula until flour-sugar mixture is mixed thoroughly into meringue. (This mixture will be very thick)
Step 5:
Push the batter carefully into an ungreased tube pan. Cut carefully through the batter with knife to break air bubbles. Be sure to even up batter so it is level and touches sides of pan.
Step 6:
Bake at 375º for 30-35 minutes until top springs back when lightly touched. (Deep cracks in top are typical of this cake)
Step 7:
Turn pan immediately upside down and let hang until cool.
