1 1/2 cups of unsalted butter at room temperature
One cup of sugar
1/2 teaspoon of vanilla extract
One beaten egg with 1 tablespoon of water for the egg wash
A bag of flaked coconut (or not if you don’t like coconut)
One jar of raspberry or strawberry jam for the filling (or whatever jam you like:)

Preheat oven to 350 degrees

Cream the butter and sugar together adding the vanilla last.
Mix flour and salt in a separate bowl
In a mixer add the creamed butter and sugar with the flour. Mix on a low speed until blended
Wrap the dough in a plastic bag and put in the fridge for 30 minutes

Take out of fridge, and roll the dough into one and a half inch balls
Then roll each ball in the egg wash and after, roll them in the coconut one at a time, then place on cookie sheet

Press a light indentation in the middle of each ball with your knuckle and place in the oven

Bake for 20 minutes or until coconut is brown

Once the cookies are cool add a scoop of your favorite jam in the indent and enjoy:)
