Cookie Dough
1 cup of unsalted butter at room temperature
3 eggs at room temperature
1 cup sugar
1 container of chocolate extract
1 Tbsp vanilla
1 Tbsp baking powder
3 cups of flour
1 cup of pecans chopped

Icing
2 cups of white chocolate
1 container of mint extract
¼ cup whole pecans

Directions:
Directions:
Cream butter, eggs and vanilla with and hand or stand mixer until smooth. Cream in sugar until smooth. Sift in dry ingredients. Knead until thoroughly mixed. Wrap dough in saran wrap and flatten into a 1" thick square. Refrigerate for 1 hour. Remove from refrigerator and roll into ¼ inch sheet (may have to use some flour to keep it from sticking. Cut into 1½ inch squares. Bake at 350F for 12-15 minutes. Remove from oven and allow to fully cool before icing.

Icing
Melt chocolate and mix in mint extract. Ice cookies and place a whole pecan into the wet icing. Allow icing to fully set before putting away.
