"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

8 apples sliced thin
Lemon juice

Directions:
Makes 3
Place flour in a lg bowl and make a well in the center. To well, add water, margarine, sugar, salt and egg. Mix with blender until all is blended.

Place dough on floured board and knead until flexible ( up to 15 min.). Divide into 3 portions; place each in small greased bowl, cover with waxed paper and damp cloth. Place in warm place to rest while preparing apples.
Let dough rest about 30 minutes or it will not “stretch”.

Peel and core apples, cut into small pieces, 1/2 “ thick; sprinkle with lemon juice to prevent discoloration.
Mix sugar and cinnamon in a small bowl.

Roll out dough on floured board with rolling pin as thinly as possible. Place dough on floured cloth spread out on a table. Begin to stretch dough by placing hands under it and pulling slowly starting in middle. Work from center to outside until very thin. Then stretch out rim. Butter the whole sheet of dough. Sprinkle apples onto dough, not too thick; sprinkle sugar and cinnamon mix over the apples.
Roll dough up into a “jelly roll” by picking up the cloth and forcing the dough to roll.
Place on greased pan;spread melted butter over strudel; if desired, sprinkle sugar/ cinnamon mix on strudel. Bake at 375º for 45 minutes.
