2 large egg whites
2½ c. sugar
½ c. water
½ c. light corn syrup
¼ tsp. salt
½ c. chopped pecans, optional
1 tsp. vanilla extract
small amount of butter

Directions:
Directions:
Butter sides of medium saucepan with butter. Combine sugar, corn syrup, salt and water in saucepan. Cook to hard ball stage (when a small amount of mixture dropped in cold water forms a hard ball); stirring only until sugar dissolves on medium heat.
In a large bowl, beat the egg whites on high until stiff peaks form. Remove the boiling candy from the heat and, with the mixer on high speed, stream in the hot candy VERY slowly. Add the vanilla and continue beating the mixture until it's no longer glossy and it holds its shape. Add the chopped pecans until combined.
Drop quickly from a teaspoon onto wax paper. Cool and store in an airtight container.
