1 fryer chicken (about 3 pounds) cheat with precooked rotisserie
1 large bag of frozen veggies of your liking
6 cups chicken stock used from cooking the chicken (I never have enough broth from cooking, so I bake the bones with water and get all the bone marrow flavors. This is what makes mine so yummy) or cheat with store-bought
Season-all Salt cover the fryer
1 Green Pepper
1 Medium onion

2 cup mix - Jiffy mix preferred
2/3 milk

Season chicken fryer with season-all salt and pepper. Stuff chicken fryer with green pepper and onion. Bake 375 degrees for 45 minutes. Tips & cheats: running short on time buy a rotisserie chicken and debone.

In a 6-qt. stockpot, heat oil over medium-high heat. Add stock from the pan that you cooked chicken. Let the chicken cool slightly. Put the cooked green pepper, onion, and skin and bones from chicken back in the baking dish with water to cook up some more flavorful stock. While the extra broth is cooking use two forks to coarsely shred meat into 1- 2 in. pieces and put back in the stockpot with broth add vegetables and cook, covered, on high until mixture reaches a simmer. Tips & cheats: running short on time and/or broth then use store-bought broth.

Meanwhile, in a bowl, mix 2 cups jiffy mix and 2/3 cups of milk. Tips & cheats: Giving the dumplings time to rest for a few minutes before cooking it begins to produce gas bubbles. This helps dumplings stay as light as air.

Drop by rounded tablespoonfuls into the boiling broth a few at a time. The dumpling should sink and then shortly rise. Add salt & Pepper to the top and cover with a lid. (Steam from cooking will cook the top of the dumplings) Reduce heat to low; cook, covered, 15-18 minutes or until a toothpick inserted in center of dumplings comes out clean (do not lift cover while simmering).
