Grandma McCormack's Biscuits & Gravy Recipe

Ingredients: Biscuits:
2 cups flour (sifted) 2 tsp. baking powder 1 tsp. salt 1/2 cup butter (or Crisco) 3/4 cup milk (regular milk or buttermilk)
Gravy: Bacon or Saugage Dripping(Bacon or Saugage) flour salt and pepper milk

Directions:Biscuits~
Sift together the dry ingredients, cut in the butter, and gradually add the milk Mix until just combined (do not over-mix)
Turn the dough onto a welt floured bread board and knead gently with the flour (DO NOT OVERWORK THE DOUGH)t
Roll the dough to about 3/4 inch and cut into rounds
Place the rounds into a greased baking dish and bake for about 20 minutes or until the tops are lightly browned
Gravy: After you cook your Bacon or Sausage use about 4-5 tablespoon of dripping. Add about 4 tablespoons of flour and mix with drippings. Use a whisk to stir. Brown over medium heat. While browning add pepper. Once browned add small amount of milk and stir (whisk) until you get the thickness you desire. Add salt and pepper to taste. |

Notes: Erin: This was and still is my all-time favorite breakfast. Non and my mom would cook this all the time when we were growing up. Non learned from her mom and she taught my mom. Both Non and Grandma McCormack would make their biscuits all by memory.
Shannon: My family loves this breakfast. I always made the gravy with bacon drippings because there is so much of it. But I love the taste of the sausage gravy better. When i really think of making the gravy, it reminds me of paste. Which is pretty much what it is. This was always a treat growing up as a kid or even for my kids. I love to make my biscuits on the thicker side and not so flat. So Yummy!!
