1 lb. Polenta
1 T. butter
Malden Sea Salt
8 oz. Mesclun Salad
1/3 c. Walnuts
6 oz. blue cheese, crumbled
1/3 c. dried cranberries
1 lemon
1/4 c. olive oil

Directions:
Directions:
In a sauce pan, boil 7 cups of water. Add 1 tsp. salt. Slowly
add polenta, stirring. Polenta will absorb water after about 4
minutes, add 1 tablespoon of butter. Stir for one to two more
minutes.

Pour polenta onto sprayed baking sheets, let sit for 15-20
minutes until Polenta has firmed, and can be cut into squares.

Salad: Mix Greens with walnuts, blue cheese and dried
cranberries. Squeeze lemon juice over greens, mix with the
olive oil and salt and pepper to taste.

When ready to serve, cut the polenta into squares and place
salad on squares. With a spatula lift squares and place on
serving plate.

Can be made in advance.
