7 oz Breadcrumbs
7 oz Grated Parmesan cheese
4 Eggs
1 tsp Nutmeg
Lemon zest from a 1/4 of the lemon
Salt and pepper to season
3 litres of chicken stock

Directions:
Directions:
Break eggs in bowl, add salt & pepper, then whisk & set aside.
In separate bowl mix breadcrumbs, nutmeg, Parmesan & lemon zest, stir until evenly distributed.
Gradually add dry mix to egg mixture with wooden spoon until absorbed.
Using hands need mixture into a ball.
Wrap ball in cling wrap & set aside.
Bring chicken stock to a slow boil.
Unwrap ball cut into 6 pieces and make into balls.
Using a potato press or ferro per passatelli place one ball in & over the boiling chicken stock press out the mixture, cutting every inch. Repeat with remaining 5 balls.
Gently simmer until the passatelli floats.
Serve with crunch Italian bread & Parmesan
