4 eggs, seperated
1 cup milk
1 cup flour
1 1/2 teaspoons baking powder
3 tablespoons of sugar
sprinkling of salt
1 tablespoon butter

Directions:
Directions:
Preheat griddle over medium heat while you mix batter.

Combine egg yokes and milk.

In a seperate bowl whisk egg whites for one minute.

Combine dry ingredients, add in milk mixture. Fold in egg
whites, so they are combined but still distinct from the batter.

Add butter to griddle, pour batter onto griddle. Cook pancakes
until bubbles and an edge is formed, about 2 minutes, flip
pancakes and cook on otherside about 1 1/2 ro two minutes.

Do not add additional butter to griddle. Continue to cook
pancakes until you have used all the batter.

Serve with fruit.

*Can add lemon zest and/or fresh blueberries to this recipe.
