1lb. Sweet Italian Peppers or Hot Italian **
2 Sprigs of Garlic
1 Large Onion
1 Large Pepper- green or red or whichever color you want
Salt, Pepper, Oregano & Parsley- to taste
EVOO

Directions:
Directions:
Heat oil in frying pan.
Cut garlic into small pieces- small enough to dissolve .
Add garlic to frying pan.
Add sausage to pan & fry until browned & remove from pan.
Sauté remaining ingredients in frying pan until almost tender.
Add sausage back in.
Sauté for another 3-5 minutes

**Don't mix hot sausage with sweet**
