2 1/4 c. Chopped Pitted Dates
1 c. Sugar
1 c. Water
1 Tbsp. Lemon Juice
1 c. Nuts, finely chopped

Cookie:
1 c. Butter of Margarine
3 Eggs, well beaten
2 c. Brown Sugar, packed
4 c. Flour
1/2 tsp. Soda
1/2 tsp. Salt

Filling:
Mix dates, sugar, water and lemon juice. Cook over low heat for about 10 minutes or until mixture is thick. Stir frequently to prevent burning. Add nuts and cool.

Cookie:
Cream butter; add sugar gradually, creaming shortening and sugar. Add well beaten eggs. Sift flour, soda and salt together. Add to sugar mixture. Blend to a smooth dough. Chill for 30 minutes. Divide dough into 2 parts and pat or roll out each part separately into a rectangle a little less than 1/4 inch thick. Spread 1/2 cooked date mixture over each part. Roll the dough up like a jelly roll. Then chill in refrigerator overnight. Cut into thin slices, using a sharp knife. Bake at 375º F. for 10 -11 minutes.

Half raisin and half dates may be used in the cookie filling if desired.

Grandma Tempel said her mother always made these and some other special cookies only for Christmas and would parcel them out, so they didn't eat them up on the first day.
