Ingredients:  
3 pounds chicken drummettes or boneless, skinless chicken thighs. If using thighs, cut thighs into strips.
Marinade:
1/3 cup cooking sherry
1 tbs Aloha shoyu
1 tsp salt
2 Tbs sugar
1 tbs grated fresh ginger
1 tbs fresh minced garlic
2-3 cups flour (with 1 tsp salt mixed in)
Vegetable oil for frying

Directions:

Mix Marinade ingredients. Put chicken in gallon Ziplock bag or bowl, cover with Marinade. Let covered chicken marinate in the refrigerator overnight or at least eight hours.
Heat oil in frying pan. Dip each piece of chicken or drummette into flour coat completely. Fry in the oil until golden brown, turning chicken over (usually takes seven minutes on each side). Drain on paper towels.

One of our favorite recipes from Gram! You can adjust ingredients to taste, can omit shoyu and double salt. Good for taking on picnics.
