Ingredients: 5 cups cake flour or all-purpose flour 1 tsp baking soda 1/2 tsp salt 1/2 tsp cloves 1/2 tsp cinnamon 1/2 tsp mace 1/2 tsp allspice 1/2 tsp nutmeg 1 lb butter 1 lb sifted, dark brown sugar 8 eggs, well beaten 1/2 lb candied cherries (1/2 red, 1/2 green) 1/2 lb each - citron, pineapple, dried apples, dates 1/2 lb each - pecans and walnuts, coarse chopped (not fine) 1 lb seedless raisins 1 lb currants (1 box) 1/2 cup water 1/2 cup sorghum molasses 1 cup honey
Red wine, brandy, or bourbon for soaking after baked

Directions:1. Sift flour once, then measure. Add baking soda, salt and spices. Sift together 3 more times to ensure all lumps are removed and dry ingredients are fluffy and airy.
2. Work shortening with a spoon until creamy, and place in mixer bowl. Add sugar gradually, beating after each addition until light and fluffy. Add eggs, and beat after each one is added.
3. Add fruit and nuts. Add water, honey and molasses. Beat well.
4. Add flour gradually, mixing until well blended after each addition.
5. Preheat oven to 225ºF. Grease and flour tube pan, or line pan with parchment paper. May also bake in three prepared loaf pans.
6. Bake in a very slow oven for 3-1/2 hours. Check for doneness by inserting a toothpick. If it comes out clean, it's done. Cool on a wire rack.
7. After cake is removed from pan(s) and cooled, wrap in cheese cloth soaked in a fruity red wine, brandy, or bourbon. Grandma used a Mogan David red wine.
8. Place in airtight container, and sprinkle 2 tbsp brandy over the cake every day for 2 weeks. Allow to ripen in a cool place for 4 to 6 weeks; if you can wait that long. |

Notes: This is my mother's dark fruit cake (Grandma Doris). She made it every Christmas when I was growing up. It is my favorite fruit cake, and the only one I would consider making. It's amazing!
If you don't like candied fruit, try dried fruit and soak it in brandy before adding to the batter.
Give it a try. It sounds harder than it is to make.
