At least 6 red potatoes (more if desired)
4-6 hard boiled eggs
1 medium onion chopped
1 carrot grated
2-3 celery stalks, cubed
salt and pepper to taste

Dressing
1 c mayo
2 tbsp vinegar
2tbsp milk

Directions:
Directions:
For dressing add all ingredients together and wisk. Set aside

Peel potatoes and boil until tender (can leave skin on if desired).
Let cool and then cube
Add onion and celery

Pour mayo dressive over potato mixture. If you need more mayo take it directly from the jar, do not make more dressing mixture.

Cut eggs and add to potato salad
Mix well and let cool
Add salt and pepper to taste
