1 cup unsalted butter
1/3 cup confectioners sugar
1 teaspoon vanilla
2 1/4 cups flour
1 cup finely chopped walnuts or pecans
1/4 teaspoon salt
about 1/1/2 cups confectioners sugar for coating

Directions:
Directions:
Heat oven to 375º
In a large bowl, with electric mixer on high speed, beat butter with sugar until creamy.
Add 1/3 cup confectioners sugar and vanilla, beat until well combined.
Gradually add flour, walnuts or pecans and salt, beating at low speed just until flour is incorporated.
Pull off pieces of dough and shape into 1 inch balls.
Place 2 inches apart on ungreased cookie sheets.
Bake 8-10 minutes until cookies are set but not brown, reversing sheets once during baking.
Place 1/1/2 cup confectioners sugar in bowl.
Remove cookies from oven, immediately drop a few hot cookies at a time into sugar, roll to coat them. Do this with all cookies.
Transfer to wire rack, cool completely.
When cookies have cooled, roll again in confectioners sugar.
