½ c. brown sugar
½ c. white sugar
½ c. melted butter

1 egg
1 tsp. vanilla
½ c. oatmeal (5-minute oats)
¾ c. flour
(or 1 ¼ c. oatmeal only, no flour to make them really lacey)

Mix first three ingredients together.

Add the second group of 4 ingredients to the sugar mixture and mix well. Pre-heat oven to 350ºF. Line a cookie sheet with foil. Place small drops (1/4 cookie scoop) on the cookie sheet and pat very flat with a wet spoon. Bake until brown (5-7 minutes). 7 minutes is usually well-browned.

Ideally, these are crispy on the outside and chewy in the center. These are unlike other oatmeal cookie because they are extremely flat and delicate. The brown sugar gives them a yummy caramel flavor.
