3/4# Ground Beef
16oz. Can Bean Sprouts (drained)
4 Eggs (scrambled)
1/2 Cup Thinly Sliced Onions
2 Tbsp. Flour
3/4 tsp. Salt
3 Tbsp.. Salad Oil (divided)

For Sauce

1 Cube Beef Bullion
1 Cup Boiling Water
2 tsp. Corn Starch
2 Tbsp. Soy Sauce
2 Tbsp. Water
1/8 tsp. Ginger

Directions:

Cook beef until well browned stirring frequently. Remove with slotted spoon onto paper towels. Drain fat from skillet.

Add bullion cube to boiling water. Add 2 Tbsp. water to corn starch. Stir in soy sauce and ginger until smooth. Gradually stir into bullion mixture and cook stirring constantly until thickened.

In bowl with a fork mix sprouts, onion, flour, salt and 2 Tbsp. oil. Add eggs and cooled cooked beef. Into skillet over medium heat add 1 Tbsp. oil. Pour 1/4 Cupsful of egg mixture into hot skillet. Cook until lightly browned on underside. Turn with pancake turner. Cook until golden brown. Repeat with remaining mixture. Serve with the sauce.

This recipe is one I remember from visits to my Grandma an Grandpa Goss when they lived on Lee Road in Berea. I found the text in my Grandfather's address book (of all places.) Thanks to Mary for the gift of the book and the memories.
