Heat oven to 375º

1 cup cooked and mashed carrots
1 cup shortening
3/4 cup sugar
1 egg
2 cups flour
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla
1/4 cup chopped nuts

2 cups powdered sugar
3 T butter
1 orange (rind and juice used for icing)

Directions:
Directions:
Mix together mashed carrots, shortening, sugar and egg.
Add flour, baking powder, salt, vanilla and chopped nuts until well combined.

Drop by teaspoon onto an ungreased cookie sheet and bake at 375 until light brown; about 10 minutes.


For Icing:
Combine powdered sugar with room temperature butter.
Grate 1 tsp of orange rind and squeeze juice from orange, mixing into powdered sugar and butter till correct spreading consistency.
