3 c. rhubarb, chopped 1 1/2 c. sugar 2 1/2 T cornstarch with 1/4 c. water 1 t. vanilla
Crust: 1 c. oatmeal 2 c. flour 1 c. brown sugar 1/2 t. salt 1/4 t. baking soda 1 c. shortening
Mix the first 3 ingredients and cook until thickened. Cool and add vanilla. Mix the ingredients for the crust and put 1/2 in a 9 x 13 pan. Pour the cooked rhubarb over the crust. Can add chopped nuts if desired. Add the rest of the crust ingredients on top. Bake at 350 for 30 to 35 minutes.
