2 lbs. zucchini, thinly sliced
salt, pepper
2 eggs, separated
1 cup sour cream
2 tbsp. flour
2 heaping cups grated cheddar cheese
6 slices bacon, cooked and crumbled
1 tbsp. butter
1/2 cup fine dry breadcrumbs, Italian
Directions:
Directions:
Cook zucchini until tender; drain. Sprinkle with salt, pepper.

Combine egg yolks, sour cream and flour. Beat egg whites until stiff; fold into sour cream mixture.

Place 1/2 zucchini in 11x7 inch pan.

Top with 1/2 sour cream mixture and 1/2 cheese. Sprinkle bacon over cheese.

Layer remaining zucchini, sour cream mixture and cheese.

Melt butter, stir in crumbs. Sprinkle over cheese.

Bake @ 350 degrees for 20-25 minutes.
