2 - eggs 2 c. - sugar 2 c. - green tomatoes, diced fine or put in blender 1 tsp. - salt 1½ c. - chopped nuts (optional) 1 c. - oil 1 T. - vanilla 3 c. - flour 1 tsp. - baking soda 1 T. - cinnamon ¼ tsp. - baking powder
Beat together eggs, sugar, green tomatoes, salt, nuts, oil and vanilla in large bowl. Sift together flour, baking soda, cinnamon and baking powder. Add to egg mixture. Pour into 2 greased and floured 5 x 9 loaf pans. Bake in preheated 350º oven for 1 hour, or until tester comes out clean.
