1 stick Imperial margarine
1 c sugar
2 eggs
3 ripe bananas
2 c flour
½ tsp salt
1 tsp baking soda
8oz chopped walnuts or pecans (optional)

Directions:
Directions:
Preheat oven to 350º.

Dry ingredients: Whisk flour, salt & baking soda - no lumps. Set aside.

Wet ingredients: In a separate bowl cream margarine and sugar until smooth. Add eggs and beat until mixed. Add bananas, beat until small lumps remain.

Add dry ingredients to wet ingredients. Mix until combined well. Pour into a greased loaf pan.

Bake at 350º for 1 hour.

Put on cooling rack. Invert loaf pan after 10 minutes - remove loaf from pan when cool.

This was given to Lexi by her grandma (my mother in law). She did not have nuts in her recipe, but I grew up with nuts in my banana bread - so we added them. I also don't understand chocolate chips in banana bread, but if you like them - add them.
