1 cup vanilla wafers, ground into crumbs
1 1/2 cups pecans toasted and finely chopped
1 cup powdered sugar
2 tablespoons cocoa power
2 tablespoons maple syrup
3 tablespoons Rum

Can use orange or cranberry juice in place of Rum

In a large bowl combine:
peacans
powered sugar
cocoa powder
maple syrup
Rum

Mix until a sticky dough forms, chill dough for 2 hours
Once chilled, scoop the cookie mixture into balls, about a tablespoon
Roll each ball in pecans

Store in an airtight container for up to 10 days
