½ c. sugar
⅓ c. all purpose flour
¼ t. salt
3 eggs, separated
2 c. milk
½ t. vanilla
2 to 3 bananas
vanilla wafers
2 T. butter
Cool whip (optional if you don't make a Meringue)

Directions:
Directions:
Preheat oven to 350º. Mix sugar, flour and salt together in double boiler or sauce pan. Blend egg yolks and milk and stir into sugar/ flour mix. Cook uncovered over boiling water or if not using double boiler stir constantly until thickened. Remove from heat and add vanilla and butter and stir.

Layer bottom of dish with vanilla wafers and bananas. Pour ½ of cooked mixture over them. Then layer again and pour the rest over them.

Top with cool whip or make Meringue:
beat egg whites of high until soft peak forms. Gradually add 4 tbs. if sugar and a little bit of vanilla. Beat until stiff peak forms. Spread over the pudding covering it completely and sealing the edges. Bake for 8-10 min. until golden brown. Enjoy!
