8½ C Filtered Water or Chicken Stock
2 C Split Peas (rinsed)
1 Bay Leaf
1-2 tsp Salt (to taste)
2 Tbs Olive Oil or Butter
1-2 tsp Thyme
1 tsp Basil
½ tsp Smoked Paprika
¼ tsp Cayenne Pepper

1 C Yellow Onion (peeled and chopped)
2 Potatoes (peeled and chopped)
1 C Carrots (peeled and chopped)
½ C Celery (peeled and chopped)
2-3 Garlic Cloves (minced)

Directions:
Directions:
Combine water, split peas, and seasonings in a large pot, then bring to a boil. Skim off the froth and continue to cook until the peas start to break apart.

While boiling, peel and chop the vegetables.
Once the peas begin to break apart, add the vegetables and minced garlic. Reduce heat to a simmer and continue cooking until vegetables are soft.

Remove the bay leaf and serve hot.
Pairs great with home made buns or dinner rolls.

There's nothing like the comfort of a hot bowl of soup on a chilly day. The dash of cayenne and smoked paprika will also help add some pep to your step.

For a more hearty version you can add a ham bone (or hocks) at the start. Simply remove at the same time as the bay leaf.
Follow this up with 1 - 1½ C diced (cooked) ham, added along with the vegetables.
